Honey is a sweet and wonderful compliment to a host of favorite foods.¬† We use it for cooking, baking, as a spread on bread, and as an addition to various beverages, such as tea, and as a sweetener in some commercial beverages.¬† Unfortunately, the production of honey in the US has decreased with the bee population steadily declining.¬† According to the USDA, “Total losses from managed honey bee colonies nationwide were 30 percent from all causes for the 2010/2011 winter, according to the annual survey conducted by the U.S. Department of Agriculture (USDA) and the Apiary Inspectors of America (AIA).”¬† This is an on going trend, as the decline has increased from previous years.¬† Adversely, the amount of honey being sold has not declined.¬† It doesn’t make sense, right? The explanation; A third or more of all the honey consumed in the U.S. is likely to have been smuggled in from China and may be tainted with illegal antibiotics and heavy metals.
