Organic Honey

Honey is a sweet and wonderful compliment to a host of favorite foods.  We use it for cooking, baking, as a spread on bread, and as an addition to various beverages, such as tea, and as a sweetener in some commercial beverages.  Unfortunately, the production of honey in the US has decreased with the bee population steadily declining.  According to the USDA, “Total losses from managed honey bee colonies nationwide were 30 percent from all causes for the 2010/2011 winter, according to the annual survey conducted by the U.S. Department of Agriculture (USDA) and the Apiary Inspectors of America (AIA).”  This is an on going trend, as the decline has increased from previous years.  Adversely, the amount of honey being sold has not declined.  It doesn’t make sense, right? The explanation; A third or more of all the honey consumed in the U.S. is likely to have been smuggled in from China and may be tainted with illegal antibiotics and heavy metals.
